Cheesy Chili Rice

Some good stick to y'alls ribs comfort food for a cold winter day. Serve it with some cornbread or buttermilk biscuits and of course, sweet tea.

Ingredients

* 1 cup uncooked white rice
* 2 cups cheddar cheese
* 1 (15 ounce) can chili without beans
* 1 teaspoon red pepper flakes
* 1/2 teaspoon black pepper
* 1 teaspoon garlic powder
* 1 tablespoon onion powder

Directions

Cook rice as you would normally.

Add the cheese, can of chili, red pepper, black pepper, garlic powder and onion powder and blend well.

Some people might say there is a lot of cheese in this, so if you would rather it not be as cheesy, obviously cut back on it. I am a cheese freak...I swear I was a mouse in my last life! So I usually lay it on good and unhealthy like.

  1. This sounds so good! I can't wait to make this. I wish I would have saw it before going grocery shopping... I don't have any chili. Have you tried it with the chili with beans?

  2. Yes, I actually like it with the beans but my husband and kids hate beans, so I just make it without them to avoid drama... and it is good either way so I don't care. I would also prefer to put tomatoes and fresh onion in it, but they all hate that too! So, I just cut them up and put them on the side so I can mix it with mine separately.
